Coffee Panna Cotta

I have been wanting to make this for months now.  Hope it turns out!

Coffee Panna Cotta

4 c heavy cream

1.5 oz unflavored powdered gelatin

2 c whole milk

6 oz granulated sugar

3 T instant coffee

8-9 plastic cups

Heat milk in a heavey sauce pan over low heat.  Sprinkle over the milk and all allow to bloom, about 3 minutes.  Do not boil.

Once the gelatin is dissolved, increase to medium heat and add instant coffee and sugar.  Stir to dissolve.  Do not boil.

Remove from heat and allow to cool for about 3 minutes.  Ladle into 9 0z. cups and refrigerate until set, about 7 hours or overnight.


Blooming gelatin

Blooming gelatin is a step integral to ensuring the smooth texture of a finished product. It involves sprinkling the powdered gelatin into a liquid and letting it sit for 3 to 5 minutes. Then, when the mixture is heated, the gelatin will dissolve evenly.
