My friend’s co-worker ordered a birthday cake/cupcake dessert. She wanted a small cake with a mountain on it and 6 dozen cupcakes.

Order: 1 6inch round with fondant and 6 dozen cupcakes.
I had fun making the mountain cake and this is my first attempt in making a figurine.

My niece turned 8 yesterday, the same day as my dad. To celebrate, we went to Dave and Busters for dinner and had Mich’lae’s Hello Kitty Cupcakes for dessert.

Cream Cheese Frosting (recipe below)

Cream Cheese Frosting Recipe
1 block cream cheese (room temperature)
1 stick unsalted butter (room temperature)
1 cup confectioner’s sugar
1 tsp pure Madagascar vanilla extract
Mix ingredients in order listed above in a mixer. (I use a Kitchen Aid with the paddle.) Add food coloring or color gel. Add to container or decorating bag with icing tip and decorate.
