Today my family and I celebrated my niece’s birthday.
To celebrate Valentine’s Day at school, I decided to make things desserts made with chocolate.
red velvet cupcakes with cream cheese frosting, chocolate dipped strawberries, and chocolate pretzels and Oreo cookies.

My friend Kim who recently moved here from Singapore discovered butter mochi near her working place. Butter mochi is a local Hawaii favorite great for potlucks and family get-togethers. The main ingredients are mochiko flour, evaporated milk, coconut milk, and eggs.
This month the staff at KCS will celebrate 4 birthdays so I decided to bake some cupcakes to celebrate. I used a box of Duncan Hines Red Velvet cake mix and added Duff’s Vanilla buttercream and edible decorations.
The baking cups are from Island Marketing located in Kalihi.

My niece turned 8 yesterday, the same day as my dad. To celebrate, we went to Dave and Busters for dinner and had Mich’lae’s Hello Kitty Cupcakes for dessert.

Cream Cheese Frosting Recipe
1 block cream cheese (room temperature)
1 stick unsalted butter (room temperature)
1 cup confectioner’s sugar
1 tsp pure Madagascar vanilla extract
Mix ingredients in order listed above in a mixer. (I use a Kitchen Aid with the paddle.) Add food coloring or color gel. Add to container or decorating bag with icing tip and decorate.
